Not only did this lemon cake look exactly as on the photos, but it tasted great!! Perfectly moist on the inside and tasting of natural lemon (not artificial, as store-bought ones often taste like). My husband loved it too!! I did bake it for 60 min instead of the 40-45 recommended in the recipe, but every oven is different. This one's definitely going to be a regular in our house.

Emilie, I love your list but was truly disappointed to see your comments. It became clear that at least for 2 recipes you had not tried them yourself. When looking for recipies, I feel infinitely better when the reviewer actually tested a few of vanilla cakes, for example and picked the best. You appear to have selected them just by liked how they looked and sounded to you.

Just wanted pitch in to say 'thank you' , Emilie. I appreciate that you've collated these ten gorgeous recipes to compare and contrast.on one lovely page. Personally; I'm finding there's zero grounds for the previous poster's complaint (let alone being "truly disappointed''! Srsly?!) seeing as reviews for these cakes are also on the links you provided to the recipe originators. I just love that you've put these cakes all on one page to mull over and plan with - and given me so much food for thought (literally!). The rest of your blog is also beautiful and a great vegan/healthy resource. I suspect the one above is actually just jealous of your popularity and success with this site, but then... haters gonna hate. Keep up the good work - thank you for doing what you do and sharing your love for food, cooking and fresh ideas with the rest of us! :)

I made the chocolate peanut butter (his choice). It turned out so good! I did a mix of coconut flour, spelt, and almond flour because I like a break from wheat. I also substituted half stevia, half brown sugar for the sugar. This recipe adapted perfectly. We had the neighbors over and it was a hit. I went a little nuts with chocolate chunks and grated chocolate on top, because chocolate. ;) I can't wait to try some more of these.

Everytime I use stevia extract, the texture is dry, doesn't rise very little, I know a bit of fiber needs to be added, applesauce, or something similar. What am I doing wrong? Aquafaba maybe? Please let me know. I am a vegan newbie, I love baking, but cakes are pretty gross. I don't have trouble with cookies,I need help with cakes. Hope you can help.

I have tried several vegan cakes ,with stevia extract instead of sugar, I know I need to add a filler, either applesauce, yogurt, or fruit juice. For some reason they end far too dense., almost ddownright gross. Usually, I don't have too much trouble with vegan cookies, with the stevia extract. Do you know how I can improve my cakes. I'd like to bake some of yours, but I'm worried that they won't be right unless I know the right ratio of stevia and filler. I hope you can help me.

Why is my vegan cake not fluffy? ›

CAKE NOT RISING

Some health benefits of choosing vegan cakes over regular cakes include: Plant-based products are healthier. Animal fats are definitely unhealthy and responsible for diseases such as diabetes, hypertension, etc. Plant-based fats have no cholesterol which is much healthier for you.

What do vegans eat in cake? ›

To put it simply, a vegan cake is a cake that doesn't contain any animal-derived ingredients, most notably eggs, milk, and other dairy products. In 'regular' cakes, eggs and dairy products are among the key ingredients used to create the sponge and icing, and often decorations, too.

Why is my vegan cake gummy? ›

This can happen for a few reasons, but the biggest reason is that your ingredients weren't room temperature. If your ingredients, even vegan ingredients, aren't all room temperature (i.e. some are cool, some are warm, some are hot), the cake will come out gummy.

What is the secret to a very fluffy cake? ›

Most cakes begin with creaming butter and sugar together. Butter is capable of holding air and the creaming process is when butter traps that air. While baking, that trapped air expands and produces a fluffy cake. No properly creamed butter = no air = no fluffiness.

What is the secret to a fluffy cake? ›

The most crucial tip? Instead of buying an entire box of cake flour, simply incorporate two tablespoons of cornstarch into 3 1/2 cups of all-purpose flour. This blocks the formation of gluten in the flour, which produces a lighter, fluffier cake.

What is left out of vegan cake? ›

Why don t vegan cakes rise? ›

In vegan cakes, the absence of the egg makes it so that it's all about taking advantage of gluten formation to build structure. This means that when you take the egg out of a cake recipe, you're going to be taking out the primary structure builder, which means that the cake is going to fall flat.

Why do vegan cakes need vinegar? ›

The reason that you'll see apple cider vinegar or vinegar in a lot of vegan baked goods is because it helps with the leavening. It's an acid and it helps the cakes to rise.

Why use vinegar in vegan baking? ›

It's all in the chemistry: the acidity in the vinegar reacts with the baking soda creating bubbles and making your batter rise.

Why does my vegan cake taste bitter? ›

One of the most common misfortunes among bakers is that they are using too much baking soda or baking powder. Know that too much baking soda or baking powder in cakes will not just lead to a metallic and bitter taste, but it can also make a big mess in the oven as it will rise beyond expectations.

Why is my cake flat and not fluffy? ›

If you end up with a flat cake, there are a few possible causes. Overbeating the flour will overwork its gluten, so fold in dry ingredients with a light hand. Remember to add the raising agent – self-raising flour already contains this, but if you use any other flour you need to mix in baking powder.

Why is my cake dense instead of fluffy? ›

One of the key factors that can lead to dense cakes is the incorrect ratio of ingredients. Baking is a science, and even a small deviation from the recipe can have a big impact on the final texture of your cake. Too much flour or not enough leavening agents like baking powder can result in a dense cake.
